Chicken Broccoli Stir Fry

Broccoli $2/lb – 4 servings
Chicken $2/lb – 4 servings
Spices etc $1.00

Other ingredients in boxed version (sake, vinegar, rice vinegar, veggie soup base, turmeric, jalapeno puree, sesame oil)

  • $5.00 at most for 4 servings.
  •  3 Tbsp cornstarch divided
  • 1/2 + water
  • 2 Tbsp water divided
  • 1 tsp garlic powder
  •  1 lb meat
  • 2 Tbsp veggie oil divided
  • 4 c broccoli florets
  • 1 tsp onion powder
  • 1/3 c reduced sodium soy sauce
  • 2 Tbsp brown sugar
  • 1 tsp ground ginger

1. In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
2. Add meat and toss.
3. In a large skillet or wok over medium-high heat, stir-fry meat in 1 tablespoon oil until done; remove and keep warm.
4. Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
5. Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
6. Cook and stir for 2 minutes.
